Office Cooking: Baked Chicken with garlic and peppers

The little conventional oven my office has graciously blessed me with has been the key to me eating healthier and cheaper. This time I just seasoned strips of chicken breast with salt, pepper, garlic, and a hint of teriyaki sauce. I don’t have any real measurements because I just eyed everything. A dash of this, a sprinkle of that, and so on.  I just sliced some peppers (not very spicy) to give it nice hint of something else and I found some potatoes and just added those for fun. Wrapped it in foil and baked it at 350 degrees for 30 minutes.

I usually prep the night before and take it with me to work. When 11:30 rolls around, I pop it in the oven and go back to work till it’s done. I can hear the oven ding! when it’s done and I always wonder how time goes by so fast. 🙂
